Herby Nuts

A savoury and fragrant snack full of good fats and protein to get you through three-thirty-itis while supporting your body through food as medicine!

Makes roughly 16 serves (30g per serve)

Ingredients:

500g mixed whole nuts and seeds of your choice

2 tablespoons olive oil

2 heaped tablespoons of mixed dried herbs (I usually go for rosemary, thyme, basil but you can do an Italian pre mix if you like)

1 teaspoon sea salt

Method:

  1. Preheat oven to 180 degrees Celsius. Prepare a large tray lined with baking paper

  2. In a large bowl mix all ingredients thoroughly

  3. Pour herby nut mixture onto tray spreading the nuts out evenly

  4. Bake for 10 minutes then stir and bake for another 5 minutes

  5. Allow to cool completely then store in an airtight container for up to a few weeks

  6. Enjoy!
