Gluten Free Granola

A gluten free granola with all the yum without the sore tum! This granola is super easy and quick to whip up, can be made in big batches and stored in an air tight container. Served with fresh berries, yoghurt or your favourite milk, this is a protein, fibre, good fats and flavourful packed way to start your day!

Ingredients- serves 16 (1 serve = 1/2 cup)

2 cups rolled oats (Gluten free certified)

2 cups Almond meal

1 cup raw mixed nuts- roughly chopped

1/4 cup pepita

30g Freeze dried apple (you can add more or swap for other freeze dried fruits of your choice)

1 teaspoons Cinnamon (add more for more flavour)

1 teaspoon pink Himalayan or Celtic salt flakes

1/2 cup Pure Maple Syrup

1 teaspoon Vanilla paste/extract

1/2 cup coconut oil/ extra virgin olive oil

Method:

  1. Preheat oven to 180 degrees and line a large baking tray with baking paper

  2. In a large mixing bowl add oats, nuts, seeds, oats, salt, cinnamon and apple, mix.

  3. Melt coconut oil and add along with maple syrup and vanilla extract the dry ingredients and mix thoroughly. The mixture should clump together if squeezed gently in hand.

  4. Pour mixture onto prepared baking tray and lightly press the mixture together.

  5. Bake in oven for 15-25min or until very lightly golden brown. Allow to cool then gently break up the mixture to small (about half a bite size) pieces.

  6. Store in an air tight container and serve with yoghurt and fresh berries.
