Choc Nut Butter Cup Chia Pudding

This is an easy delicious high fibre, high protein breakfast or desert that will help keep you full, support a happy, healthy gut, satisfy your sweet tooth and can be made in 5 minutes the night before for a quick grab and go breakfast or snack!

Ingredients- serves 2

1/4 cup of chia seeds - (black or white is fine)

1 tablespoon of ground flaxseeds (also known as linseeds)

1 cup of your choice of milk (I prefer oat for the creaminess)

1 teaspoon of vanilla extract

3 tablespoons of pure maple syrup - you can add more if you would like it a little sweeter

2 heaped tablespoons raw cocoa powder

2 heaped tablespoon of nut (or seed) butter of your choice (peanut, cashew, almond, pepita)

2 teaspoon of raw crushed cocoa nibs -optional

Method:

  1. Add chia seeds, flaxseeds, cocoa powder, maple syrup and milk together thoroughly.

  2. Divide half the pudding mix between 2 jars filling half way

  3. Add 1 tablespoon of nut or seed butter to the middle of each jar.

  4. Top up each jar with the remaining pudding mix and sprinkle cocoa nibs over the top.

  5. Place jars in fridge ready to grab and go the next day!

Note: If you can’t wait until the next day to eat your pud just allow it to set for 30-60 minutes.
