These protein balls are the perfect treat to get you through your afternoon slump. Low in carbs, the protein and good fats in these balls help to even out blood sugar levels and balance energy. The tricky part is just having one!
Ingredients:
2 cup almond meal
1 cup tahini
2 tbs of coconut oil
1 tsp vanilla extract
Pinch of salt
2 scoop of protein powder
(I use Vital Plant based Vanilla Protein powder)
4 tbs maple syrup
(the balls aren’t overly sweet so you
may like to add a little more)
Cocoa nibs for coating
Method
1) Mix all the ingredients in a large bowl until well combined (except for the cocoa nibs)
2) Roll balls the size of a 50 cent piece or slightly smaller
3) Coat with cocoa nibs, store in the fridge and enjoy
